2-Minute English Muffins with Cashew Butter & Homemade Raspberry Jam

2-MINUTE ENGLISH MUFFINS with cashew butter & homemade raspberry jam. ⁣After quite a few baking fails I decided to resort to this foolproof recipe for an easy homemade version of PB&J. It’s such a great recipe!

Ingredients

ENGLISH MUFFINS

+ 1/4 cup almond flour ⁣
+ 1 tbsp arrowroot (or coconut flour) ⁣
+ 1 egg⁣
+ 1 tbsp ghee (or coconut oil)⁣
+ 1/8 tsp baking soda⁣
+ 1/4 tsp salt⁣

RASPBERRY JAM

+ 1/4 cup fresh raspberries ⁣
+ 1 tsp chia seeds⁣

Instructions

MUFFINS

1. Combine all dry ingredients; then add egg and ghee/oil, mixing until smooth

2. Add to a mug or ramekin ⁣

3. Microwave for 2 minutes⁣

4. Remove, slice and toast ⁣

JAM

1. Mash raspberries and mix with chia seeds - add sweetener of choice if you want extra flavor⁣
