2-MINUTE ENGLISH MUFFINS with cashew butter & homemade raspberry jam. After quite a few baking fails I decided to resort to this foolproof recipe for an easy homemade version of PB&J. It’s such a great recipe!
ENGLISH MUFFINS
+ 1/4 cup almond flour
+ 1 tbsp arrowroot (or coconut flour)
+ 1 egg
+ 1 tbsp ghee (or coconut oil)
+ 1/8 tsp baking soda
+ 1/4 tsp salt
RASPBERRY JAM
+ 1/4 cup fresh raspberries
+ 1 tsp chia seeds
MUFFINS
1. Combine all dry ingredients; then add egg and ghee/oil, mixing until smooth
2. Add to a mug or ramekin
3. Microwave for 2 minutes
4. Remove, slice and toast
JAM
1. Mash raspberries and mix with chia seeds - add sweetener of choice if you want extra flavor
