20-Minute Salmon Bowl 

This 20-minute salmon bowl will make you feel like you have your life together. Save this recipe for the next time you have zero time or effort to give but want something delicious & satiating. Here’s a video to see exactly how I make it.

Ingredients

+ 8 oz salmon
+ 2 yellow squash
+ 4 cups kale
+ Jasmine/white rice
+ 1/4 cup coconut aminos (or soy)
+ Olive oil
+ Minced garlic
+ Sesame seeds

Instructions

1. Preheat oven to 400 Fahrenheit.

2. Slice squash into rounds about 1/4 inch thick.

3. Toss in olive oil and arrange on a baking sheet and roast for about 15 minutes or until browning.

4. Cut salmon into cubes and toss with aminos or soy sauce and a few tsp minced garlic.

5. Air fry for 15 minutes at 400 (I like mine a little more well done so did 18 minutes).

6. Separately, saute kale or spinach in olive oil or steam.

7. Add everything to a bowl, top with sesame seeds and add sauce if you like! I love adding a sriracha tahini but am keeping things simple at the moment.
