OK, I haven’t had Chinese in years so I can’t say for sure but my husband said that’s what this 5-minute healthy lo mein tasted like. So quick and delicious!
+ 1 cup peanut butter (sub cashew if you're peanut-free)
+ 1/2 cup coconut aminos
+ 1/2 cup honey
+ 1/2 cup coconut cream
+ 1 tbsp sesame oil
+ LOTS of fresh minced garlic and ginger
+ Noodles (I used brown rice Asian noodles)
+ Veggies of choice (I used broccoli, mushrooms, cabbage, and green onions; you can use anything you have on hand)
1. Blend all sauce ingredients
2. Cook noodles and steam veggies
3. Combine with sauce and serve!
PRO TIP: Refrigerate and eat cold. It’s unreal!
