Quinoa Crusted Salmon

Look, not cookies! Dinner last night was QUINOA CRUSTED SALMON and it was soo good – and husband approved. I roasted some bok choy at the same time, added a simple tahini sauce and it was all ready in 20 minutes. This is my new favorite way to make fish so I can’t wait to eat it all the time until I’m completely sick of it!

Ingredients

+ Salmon (or any fish of your choice)
+ Avocado oil
+ 1/4 cup quinoa ⁣
+ 1/4 tsp garlic salt⁣
v1/4 tsp dry mustard ⁣
+ Pinch of pepper⁣

For tahini:⁣
+ ⁣3:1 tahini to maple syrup⁣
+ 1/2 tsp ginger⁣
+ Pinch of garlic⁣ salt
+ Generous amount of salt ⁣

Instructions

1. Preheat oven to 400 Fahrenheit⁣

2. Rinse and pat salmon dry; spray or brush with avocado oil⁣

3. Mix all dry ingredients together and pour on salmon creating a thin layer ⁣

4. Spray or brush again with oil ⁣

5. Bake for 15-20 minutes ⁣

6. Broil at the end for 1 minute ⁣
