Oatmeal Cookies

I had many baking fails the last 2 days so I decided to just go with an oldie but very goodie so I could get my fall cookie fix in. These are so easy and you can customize what flavors and add-ons you prefer; they’d be great with cinnamon or pumpkin spice, and I originally made them with cranberries and nuts. Delish either way!⁣ Here’s a reel on exactly how I make them.

Ingredients

+ 1 cup rolled oats⁣
+ 1 1/4 cup oat flour ⁣
+ 1 egg or flax egg ⁣
+ 1/3 cup maple syrup ⁣
+ 2 tbsp coconut oil ⁣
+ 1 tsp baking soda⁣
+ 1-2 ripe bananas (varies depending on size but either works, 2 will be more moist)⁣
+ Chocolate chips ⁣
+ Flaky salt ⁣

Instructions

1. Preheat oven to 375˚F.
2. Combine all dry ingredients, mixing thoroughly then add wet ingredients.
3. Arrange cookies on a parchment lined baking sheet - they don’t really spread so if you want a thinner cookie gently press them to desired thickness.
4. Bake for about 15 minutes (ovens vary and baking time will vary based on how thick your cookies are so just watch until they’re lightly browned on top!)⁣
5. Remove, sprinkle with salt and let cool.
