20-Minute Turkey Meatballs

I’m all about a 20-minute meal and these turkey meatballs with sun dried tomatoes, Kalamata olives and feta are so easy and flavorful, I’ve been eating this on repeat for the last month. So good to make in batches too to have leftovers for lunch! See how I make these in this video.

Ingredients

+ 1 lb ground turkey ⁣
+ 1 tsp garlic powder⁣
+ 1 tsp onion powder⁣
+ 1 tsp dried oregano ⁣
+ 1/2 tsp each salt & pepper ⁣

+ 2/3 cup sliced Kalamata olives⁣
+ 2/3 cup chopped sun dried tomatoes ⁣
+ 2/3 cup crumbled feta (I use vegan)⁣
+ A few tbsp oil from the sun dried tomatoes ⁣

Instructions

1. Preheat oven to 425˚ Fahrenheit.
2. Combine turkey and spices thoroughly. ⁣
3. Line a baking sheet with parchment paper and roll turkey into balls, about 2 inches in diameter. This size yields 9 meatballs. ⁣
4. Bake for about 20 minutes or until golden brown on the outside. ⁣
5. Separately, combine oil, tomatoes, olives, and feta in a small skillet and heat over low heat, just melting the feta slightly. ⁣
6. Stir to combine and then let sit to meld together a little. ⁣
7. I serve mine with my bone broth rice and roasted veggies! You can roast broccolini in a little oil at the same time as cooking the meatballs, they take about 15 mins. And you can make the rice while meatballs are cooking too. Enjoy!
