Pear Crisp

My pear crisp is easy, delicious, and perfectly warm and comforting. This is one of those simple desserts that feels extra special, especially on a chilly fall or winter evening. Save this recipe for your next cozy night in or bring it to a holiday get-together — it’s always a crowd favorite.

Ingredients

Filling:
+ 3-4 ripe pears, peeled and cut into 1 inch pieces
+ 1/3 cup sugar
+ 2 tbsp cornstarch
+ 1 tbsp cinnamon
+ 1 tsp ginger
+ 1 tsp vanilla

Crisp:
+ 3/4 cup flour (I use Bob's Red Mill)
+ 3/4 cup old fashioned rolled oats
+ 1/2 cup brown or coconut sugar
+ 1/4 cup granulated sugar
+ 1/2 tsp cinnamon
+ 1 stick (8 tbsp) salted butter

Instructions

1. Preheat your oven to 425°F.

2. In a medium bowl, combine all the filling ingredients and set aside.

3. In a separate bowl, mix together the crisp ingredients. Melt the butter just enough so it’s soft and easy to combine with the dry ingredients.

4. (optional): If you like a little texture, toss in a handful of chopped nuts — pecans or walnuts work especially well.

5. Lightly grease a small baking dish (I use a 7x5 inch dish). Spoon in the filling first, then sprinkle the topping evenly over the fruit.

6. Place the dish in the oven and bake for 25–30 minutes. Oven times may vary, but you’ll know it’s ready when the edges are golden and crisp, the filling is bubbling, and the top looks perfectly browned.

7. Remove from the oven, let it cool slightly, and serve warm. Super good with a scoop of vanilla ice cream!
