Almond Butter Muffins

When I whipped these muffins up I had no specific recipe in mind; I was simply concocting something out of ingredients I had lying around. To my surprise they turned out great and are delicious on their own, with butter or nut butter slathered on, or with add-ins. I would suggest a mashed banana, blueberries, walnuts, or chocolate chips for a sweet treat. Enjoy!

INGREDIENTS:

3 eggs

2 individual containers of unsweetened applesauce (3.9oz each)

¼ cup honey  (you could use maple syrup as well)

½ cup almond butter (or nut/seed butter of your choice)

1 ½ cup almond flour

¼ – 1/3 cup chia seeds

3 tbsp coconut sugar

1tbsp baking soda

1 tsp vanilla extract

pinch of salt

DIRECTIONS:

Preheat oven to 350 degrees Fahrenheit

In mixing bowl, mix eggs, applesauce honey, nut butter, and vanilla until smooth

Add in dry ingredients; almond flour, chia, coconut sugar, baking soda and salt

Pour into lined muffin pan

Bake for 25 minutes or until brown on top

Remove, let cool for 5 minutes and ENJOY!
