You can make this pasta dish vegan or non-vegan and it is truly the BEST fall comfort food. There are so many variations of this recipe out there so this is my take on it!
+ Pasta of choice (I like rotini for this)
+ 4 cups cubed butternut squash
+ 2 cloves garlic
+ 3 tbsp butter of choice (can be vegan)
+ 4 tbsp olive oil
+ Fresh sage
+ Salt and pepper
+ Pine nuts (optional)
+ Cheese of choice
1. Sauté chopped garlic and butternut squash over low heat, covered for about 15 minutes or until squash is soft
2. Separately, cook pasta and make sure you save 1/2 cup pasta water
3. Add butter and sage; sauté over medium heat until the butter browns a bit
4. Add pasta water and continue to simmer until sauce thickens
5. Add salt and pepper to taste
6. Remove, add pasta and toppings and enjoy!
