Caramelized Shallot Salad

I recreated the Pizzana salad (video here) that I order in bulk multiple times a week. I know what you might be thinking, salad, boring…but hear me out it is actually SO delicious you’ll want it all the time. I normally hate onions and anything really oniony but when you caramelize the shallots they’re more sweet than anything. ⁣⁣Let me know if you try this!

Ingredients

+ 1 shallot, chopped⁣⁣
+ 1/2 cup olive oil for dressing, plus more for sautéing
+ 2-3 tbsp honey ⁣⁣
+ 4ish cups lettuce⁣⁣
+ 1-2 cups brussels sprouts, chopped ⁣⁣
+ 1/2ish cup pistachios (just use however much you like)
+ 1 apple, thinly sliced ⁣
+ Salt and pepper to taste ⁣⁣

Instructions

1. Chop shallots and sauté in a little olive oil over low heat for 20-30 minutes, until very soft (don’t let them burn!!). About halfway through add some salt and stir frequently.

2. Separately, combine lettuce, brussels sprouts, apple and pistachios⁣.

3. Once shallots are done, add to a blender (or emulsifier) with olive oil and honey. Blend (there will still be some chunks and that’s ok⁣ay).

4. Add salt and pepper to taste.
