You guys wanted a soup recipe and I have to say this Creamy Pumpkin Soup is my favorite (and easiest) I’ve ever made! Also it was loved by a non-pumpkin loving man so that’s when you know it’s good. Here’s a video on exactly how I made it.
You guys wanted a soup recipe and I have to say this Creamy Pumpkin Soup is my favorite (and easiest) I’ve ever made! Also it was loved by a non-pumpkin loving man so that’s when you know it’s good. Here’s a video on exactly how I made it.
+ 2 cans pumpkin purée
+ 1.5 cups broth (I used chicken bone broth but can use vegetable)
+ 1 cup coconut cream
+ 1 cup chopped yellow onion
+ 1 clove garlic
+ 3-4 tbsp ghee (sub oil if vegan)
+ Drizzle of honey
+ 1/2 tsp nutmeg
+ Lots of salt & pepper to taste
1. In a pot, simmer ghee (or oil) over medium-low heat.
2. Add chopped onion and garlic and simmer until softened.
3. Add pumpkin, broth, cream and simmer 15-20 minutes, whisking ingredients together thoroughly first.
4. Let cool slightly so it’s not boiling hot, then add to a blender and blend until creamy.
5. Add nutmeg, salt and pepper to your liking.
6. I highly recommend adding bread! I made these baked sourdough “croutons” and they brought the whole thing together.
