Creamy Vegan Butternut Squash Pasta

CREAMY VEGAN BUTTERNUT SQUASH PASTA, aka all my favorite things in one dish! I’ve been living off butternut squash bisque so I thought… why not turn this into a sauce and pour it over some pasta? Well, it did not disappoint! Feel free to modify and add chicken or more veggies. ⁣


+ 3 cups cubed butternut squash⁣
+ 1/4 cup chopped yellow onion or shallot⁣
+ 1 clove garlic, chopped⁣
+ 2-3 tbsp olive oil, ghee or vegan butter⁣
+ 1/2 cup broth of choice⁣
+ 1/2 cup milk of choice⁣
+ 1/2 cup nutritional yeast ⁣
+ Salt and pepper to taste ⁣
+ Pasta of choice ⁣


1. Boil cubed squash in a large pot until they are just cooked through ⁣

2. Strain and add back to pot with chopped onion, garlic and either oil or butter⁣

3. Sauté until onions begin to lightly brown ⁣

4. Let cool for a few minutes before blending ⁣

5. Add to blender with broth and milk; blend until creamy ⁣

6. Add nutritional yeast and continue blending⁣

7. Taste the sauce and add salt and pepper to your liking (feel free to add herbs such as sage or rosemary)⁣

8. Pour over pasta and veggies of choice and enjoy! I topped mine with red pepper for a little kick!⁣
