Dad’s Rosemary Chicken Pasta

I’ve been feeling uncreative in the kitchen lately so I’m reminiscing about meals I had growing up (my dad cooked for us every night) and recreating them… maybe I’ll do a series? Let me know! This was on of my favorites and it’s so simple but flavorful!⁣⁣ (If you’re vegan, omit the chicken – still delicious!)

Ingredients

+ 1 lb chicken (breast or tenders – omit if vegan)⁣⁣
+ 1 box penne (I used Jovial Foods)⁣⁣
+ 1 large can whole peeled tomatoes ⁣⁣
+ 4 cups broccoli heads⁣⁣
+ 2 cloves of garlic ⁣⁣
+ Fresh Rosemary ⁣⁣
+ Olive oil ⁣⁣
+ Salt⁣
+ Cheese/vegan cheese of your choice ⁣

Instructions

1. Add chopped garlic and a generous amount of rosemary to a large skillet over medium heat; sauté until garlic is browning

2. Add in cubed chicken and continue cooking over medium/low heat, until brown on the outside ⁣⁣

3. Separately, steam broccoli until tender ⁣⁣

4. Also separately, cook pasta!⁣⁣

5. Once chicken is done, add broccoli and *just the tomatoes* from the can to the skillet – I like to tear them into smaller pieces (careful of getting sprayed with tomato juice)⁣⁣

6. Season with a little salt to your liking⁣⁣

7. Add pasta and stir over low heat until everything is blended⁣⁣

8. *My dad says he used to add heavy cream at the end; I didn’t do this but it’s really good... you could do 1/4 cup cream or coconut milk ⁣⁣

9. Add cheese of your choice (I use Parma! Vegan Parmesan)
