Dairy-Free, Nut-Free Mac & Cheese

My latest hyper-fixation… This Dairy-Free, Nut-Free Mac & Cheese is the best cozy comfort food for fall. It just takes as long as your pasta takes to cook and is also so good with veggies thrown in! You can use higher protein pasta to get that in too. Here’s a video of how I made my Dairy-Free, Nut-Free Mac & Cheese!

Keep scrolling for the recipe details and Pro Tip… You may have to play with the amount of each ingredient a bit to get it where you like it, especially nutritional yeast and salt. Also some tahini is thicker than others so you may need to add more milk.

Ingredients

Makes about 4 servings

+ Pasta of choice (I like brown rice pasta)

+ 3/4 cup milk (hemp is nice and creamy for this)

+ 1/3 cup tahini

+ 3/4 cup nutritional yeast

+ 1/4 cup olive oil

+ 1/4 cup lemon juice

+ 1 tsp garlic powder (or fresh garlic)

+ 1/2 tsp onion powder (optional)

+ 1/4 tsp smoked paprika (optional but delish)

+ 2-4 tosp pumpkin purée

+ Lots of salt!! It’ll taste super bitter without!

Instructions

1. Cook pasta until al dente

2. In a blender, combine all ingredients and blend

3. Pour over hot pasta, stir and enjoy!
