Fluffy Hazelnut Pancakes

WOW it has been FOREVER since I’ve written a blog post. Honestly, I miss it and have every intention of picking it back up at least weekly. No better way to ease back into it than with a recipe, so without further ado (you know I loathe lengthy recipe intros) here are my fluffy, moist gluten free, grain free, dairy free, sugar free hazelnut pancakes!

Ingredients

+ 2 cups hazelnut flour (you could also use almond meal)
+ 2 eggs
+ 3/4 cup dairy free milk of choice (I used macadamia nut)
+ 1 tbsp chia seeds
+ 1 tbsp monk fruit extract
+ 1/2 tsp cinnamon
+ 1/2 tsp baking powder
+ 1/4 tsp salt

Instructions

1. blend all dry ingredients to ensure even distribution

2. mix in wet ingredients

3. heat ghee or oil of choice on a skillet over medium-high heat

4. pour pancakes, making sure they don't run into each other

5/ cook until bubbling around edges and middle; flip

6. remove and enjoy!
