High-Protein Stuffed Honeynut Squash

This stuffed honeynut squash is the best easy (and healthy) fall recipe! There are so many ways you can modify this recipe and it only requires 5 ingredients. Here’s a video of exactly how I made this dish. Enjoy!

Ingredients

+ 2 honeynut squash, halved

+ 1 lb ground turkey (you can use turkey, beef, chicken, tofu etc)

+ Olive oil

+ Salt

+ Thyme

Instructions

1. Preheat oven to 400 Fahrenheit

2. Cut squash lengthwise and scoop out seeds

3. Lightly brush or drizzle olive oil over squash

4. Add a few pinches of salt to each squash

5. Roast for ~35 or until browning around edges

6. Separately, in a skillet sauté your protein of choice until cooked. I made my turkey really simple with salt, pepper and thyme but you can get creative!

7. Add protein mixture to squash and enjoy (you can eat skin too, it’s delish)
