How I Meal Prep for the Week

I’m all about making things easier when it comes to cooking so I thought I’d share how I meal prep for the week using things I already have in the fridge! These items always lasts me couple of days and make it easy to throw together bowls, salads, etc. … Meal prepping is a must for me when I’m at home because I always have something easy on hand to eat during a busy week!

Ingredients

+ chicken breast

+ ground turkey

+ delicata squash

+ broccoli

+ zucchini

+ rice

+ bone broth

+ olive oil

+ salt & pepper

Instructions

Chicken Breast:
Add to a skillet with a little broth, drizzle with olive oil, salt and pepper. Cover and cook 10ish mins until cooked through, let cool and shred (or roast or instant pot!) - I like to sauté in a little oil on each side first to brown it too

Ground Turkey:
Sauté on skillet until lightly browned

Delicata Squash:
Slice, scoop out middle, drizzle with olive oil, roast at 400 for 15-20 mins then salt

Broccoli:
Toss in olive oil, roast at 425 for 15ish minutes or until browning a little, add salt

Zucchini:
Slice thin, drizzle in olive oil, roast at 400 until browning, salt

Rice:
1 cup rice, 1 cup bone broth 1/2 cup water, tsp of ghee or olive oil - simmer covered on low for 15, leave covered with burner off for 10 mins
