Maple Pecan & Goat Cheese Salad

Salads are all about the toppings and this Maple Pecan & Goat Cheese Salad (vegan!) is my favorite when I want a little sweet/savory combo. Here’s a reel on how I made it. Enjoy!

Ingredients

+ 4 cups greens ⁣
+ 2-3 cups roasted sweet potatoes ⁣
+ 1 cup sliced dates ⁣
+ 1 cup pecans ⁣
+ 1/3 cup maple syrup ⁣
+ Goat cheese (I used vegan)⁣

Dressing:⁣

+ 2/3 cup olive oil ⁣
+ 1/4 cup balsamic vinegar ⁣
+ 1 tbsp Dijon mustard ⁣
+ Salt and pepper to taste ⁣

Instructions

1. For pecans, toast lightly on a skillet over medium heat for 2-3 minutes on each side then add maple syrup and stir, coating evenly. Add a little salt then transfer to a baking sheet to cool.
2. Combine the rest of the ingredients for the best savory/sweet salad.
