My Go-To Quick Pasta

This is my go-to pasta when I want something quick, fresh and delicious. This recipe is great because there are minimal ingredients and it takes about 20 minutes to make the whole thing. Measurements are approximate, but here’s a reel of how I make it.

Ingredients

+ Pasta of choice ⁣
+ 3 cups cherry tomatoes, halved ⁣
+ 4 cloves garlic, sliced ⁣
+ 1 cup fresh basil, chopped ⁣
+ Olive oil ⁣
+ Salt and pepper ⁣
+ Optional crushed red pepper for a kick⁣
+ Cheese of choice ⁣

Instructions

1. Add about 1/2 cup olive oil, tomatoes and garlic to a skillet. Simmer over medium/low heat until everything is soft and cooked through, about 10/15 minutes (I remove from heat just before tomatoes get mushy).
2. Cook pasta while sauce simmers. ⁣
3. Add chopped basil, salt and pepper, crushed red pepper if desired. ⁣
4. Add pasta and toss. ⁣
5. Usually I leave it here but when I want something creamier/saucier I’ll add some ricotta, even adding some of the pasta water and ricotta is so good!
