Persimmon Goat Cheese Salad

I found these persimmons at the farmer’s market so I threw together this delicious salad and it did not disappoint! Persimmons have a sort of honey like flavor so I wanted to balance the sweetness with milder flavors and add a little crunch. Here’s a reel on exactly how I made it. Enjoy!

Ingredients

+ 4 cups baby spinach ⁣⁣
+ 2 persimmons, sliced ⁣⁣
+ 1 cup golden beets, diced ⁣⁣
+ 1/2 avocado, diced⁣⁣
+ 1/2 cup slivered almonds ⁣⁣
+ Crumbled (vegan) goat cheese ⁣⁣

Dressing:⁣⁣
⁣⁣
+ 1/2 cup olive oil ⁣⁣
+ 2 tbsp champagne vinegar ⁣⁣
+ 2 tbsp Dijon mustard⁣⁣
+ 1 tbsp honey ⁣⁣
+ Salt and pepper to taste ⁣⁣
