Salted Caramel Cookies

For all of your Election Day stress eating/baking needs, I give you my dreamy SALTED CARAMEL COOKIES. Seriously, this picture does not do them justice. They might be the best cookies I’ve made to date! ⁣


+ 1 cup almond flour ⁣
+ 1 cup arrowroot flour ⁣
+ 1 egg⁣
+ 3/4 cup brown sugar (I used coconut)
+ 1/2 cup coconut oil ⁣
+ 1 tbsp date syrup (maple is fine too)⁣
+ 1 tbsp caramel ⁣
+ 1 tsp baking soda⁣
+ 1 tsp vanilla ⁣
+ Salt to taste ⁣


1. Preheat oven to 350 Fahrenheit⁣

2. Combine dry ingredients and wet ingredients separately, then mix thoroughly⁣

3. Scoop about 2” balls onto a lined baking sheet leaving lots of room between cookies (these spread!⁣)

4. Bake for about 15 minutes, but check on them as ovens vary; once they spread and begin to brown they’re done ⁣

5. Remove, let cool, top with more caramel and some flaked salt!⁣
