My friend challenged me to make healthier Snickers ice cream bars, and I have to say, I nailed it! Full disclosure, I eyeballed everything but this is my method (seen here)! Oh and by the way, they’re vegan!
My friend challenged me to make healthier Snickers ice cream bars, and I have to say, I nailed it! Full disclosure, I eyeballed everything but this is my method (seen here)! Oh and by the way, they’re vegan!
1 pint vegan vanilla ice cream (I used Craig's)
2 cups peanuts
CARAMEL:
1 cup peanut butter
3/4 cup coconut oil
3/4 cup maple syrup
NOUGAT: (honestly you could omit this and it’d still be amazing)
1/2 cup almond flour
1/2 cup coconut flour
1/2 cup maple syrup
1/4 cup nut milk
1/2 tsp vanilla
CHOCOLATE COATING:
4 Hu chocolate bars
Sea salt
1. *I used a paper loaf pan because it was easy to peel off once everything was frozen so I highly recommend this method! Not sure how it would work in metal
2. Add ice cream to loaf pan and smooth it down so it’s all even
3. Add nougat (if using) and press to pack it down, then add the peanuts
4. Pour caramel mixture over the top and FREEZE until hard
5. Separately, melt chocolate in a pan over low heat (add a few tbsp coconut oil so it doesn’t stick) and pour over frozen ice cream/caramel bar
6. Freeze again then remove from pan and slice UPSIDE DOWN so starting to cut through the bottom and cutting the top layer last (this prevents the chocolate coating from breaking)
7. Enjoy!
