Taco Bowls

OK, serious question… are you team tacos, pizza or burgers? I’m very much a TACOS girl and lately my obsession has been taco bowls. I made an easy, delicious chicken Tinga, added some sides and ate it nacho style because I had no taco shells – but it was absolutely perfect. I didn’t take exact measurements but you can adjust according to taste.

Ingredients

+ 3 tomatoes (you can used canned too)⁣
+ 2 garlic cloves⁣
+ 1 onion (I used white but recommend yellow)⁣
+ Chipotle peppers or powder ⁣
+ Cumin⁣
+ Oregano⁣
+ Avocado oil⁣
+ Salt ⁣

Instructions

1. Chop tomatoes, onion and garlic ⁣

2. Add to skillet and sauté in olive oil⁣

3. Add peppers (probably 2 if you’re using canned, 1 tsp ish if using powder) and a dash of cumin and oregano ⁣

4. Stir, cooking until onions and garlic are lightly browned ⁣

5. Let cool slightly⁣

6. Add to blender, pulsing to finely chop⁣

7. Add salt to taste ⁣⁣

8. I added the sauce to shredded chicken that I made in my Instant Pot and added that to a bowl with cauliflower, Brussels sprouts, mango salsa, guacamole and Siete Foods chips
