throwback because I can’t wait for fall & all the cooking and baking when I get into fall mode 🍁🍂🤎 these oatmeal
cookies are so easy and versatile, you can customize them with whatever you like, add some collagen or protein powder, top with almond butter...endless possibilities

Ingredients:
1 cup rolled oats
1 1/4 cup oat flour
1 egg or flax egg
1/3 cup maple syrup
2 tbsp coconut oil
1 tsp baking soda
1-2 ripe bananas (varies depending on size but either works
2 will be more moist)
chocolate chips flaky salt
Directions:
Preheat oven to 375 fahrenheit
Combine all dry ingredients, mixing thoroughly then add wet ingredients
arrange cookies on a parchment lined baking sheet - they don’t really spread so if you want a thinner cookie gently press them to desired thickness
Bake for about 15 minutes (ovens vary and baking time will vary based on how thick your cookies are so just watch til they’re lightly browned on top!)
Remove, sprinkle with salt and let cool
