my go-to pasta when I want something quick, fresh

my go-to pasta when I want something quick, fresh and delicious 🤌🏻 this recipe is great because there are minimal ingredients and it takes about 20 minutes to make the whole thing 🍝 measurements are approximate!⁣

Ingredients:⁣
⁣
Pasta of choice ⁣
3 cups cherry tomatoes, halved ⁣
4 cloves garlic, sliced ⁣
1 cup fresh basil, chopped ⁣
Olive oil ⁣
Salt and pepper ⁣
Optional crushed red pepper for a kick⁣
Cheese of choice ⁣
⁣
Directions:⁣
⁣
Add about 1/2 cup olive oil, tomatoes and garlic to a skillet - simmer over medium/low heat until everything is soft and cooked through, about 10/15 minutes (I remove from heat just before tomatoes get mushy) ⁣
Cook pasta while sauce simmers ⁣
Add chopped basil, salt and pepper, crushed red pepper if desired ⁣
Add pasta and toss ⁣
usually I leave it here! But when I want something creamier/saucier I’ll add some ricotta, even adding some of the pasta water and ricotta is yum 😋
