The Best Kale & Quinoa Salad I Had In Paris

This was my favorite salad in Paris (I know…of all the amazing food?) so I had to recreate it. This is so great on its own or you could add some goat cheese, chicken, nuts etc. Here’s a reel on how I make this salad. ⁣⁣Bon appétit!

Ingredients

+ 1 bunch of kale (approx 4 cups)⁣⁣
+ 2 cups cooked quinoa ⁣⁣
+ 1 grapefruit, chopped⁣⁣
+ 1 orange, chopped ⁣⁣
+ 1 avocado, cubed ⁣⁣
+ 1/2 cup dried cranberries ⁣⁣
+ 1 cup halved cherry tomatoes (optional imo)⁣⁣
+ 1/2 cup pine nuts ⁣⁣
⁣⁣

⁣Dressing:⁣⁣
+ 1/3 cup olive oil ⁣⁣
+ 3 tbsp balsamic vinegar ⁣⁣
+ 2 tbsp mustard ⁣⁣
+ 2-3 tbsp honey ⁣⁣
+ Salt and pepper to taste ⁣⁣

Instructions

1. Wash and cut kale and massage with olive oil.
2. Add all ingredients ⁣⁣to the kale.
3. Thoroughly mix dressing ingredients and add it to the salad.
4. That’s it! So easy and so delicious!
