This was my favorite salad in Paris (I know…of all the amazing food?) so I had to recreate it. This is so great on its own or you could add some goat cheese, chicken, nuts etc. Here’s a reel on how I make this salad. Bon appétit!
This was my favorite salad in Paris (I know…of all the amazing food?) so I had to recreate it. This is so great on its own or you could add some goat cheese, chicken, nuts etc. Here’s a reel on how I make this salad. Bon appétit!
+ 1 bunch of kale (approx 4 cups)
+ 2 cups cooked quinoa
+ 1 grapefruit, chopped
+ 1 orange, chopped
+ 1 avocado, cubed
+ 1/2 cup dried cranberries
+ 1 cup halved cherry tomatoes (optional imo)
+ 1/2 cup pine nuts
Dressing:
+ 1/3 cup olive oil
+ 3 tbsp balsamic vinegar
+ 2 tbsp mustard
+ 2-3 tbsp honey
+ Salt and pepper to taste
1. Wash and cut kale and massage with olive oil.
2. Add all ingredients to the kale.
3. Thoroughly mix dressing ingredients and add it to the salad.
4. That’s it! So easy and so delicious!
