Vegan Caramel Apple Oat Bars

Well, it was pretty much a tie between sweet and savory in response to my question on my IG post, so I kinda did both. These VEGAN CARAMEL APPLE OAT BARS are totally customizable, so easy, and make a delicious, convenient breakfast or snack. In my next batch, I’ll add collagen protein or vanilla protein powder and have this post-workout to fuel me for a long day.

INGREDIENTS: (makes about 6 square bars)⁣

2 cups oats or buckwheat (I used Bob’s Red Mill quick cooking oats)⁣

3 tbsp oat flour ⁣

3 tbsp applesauce or apple butter ⁣

2 tbsp nut butter (I used cashew)⁣

1/4 cup + 1 tbsp milk of choice ⁣

1/4 cup chia seeds ⁣

1/4 cup maple syrup ⁣

1 tsp vanilla ⁣

1/2 tsp cinnamon ⁣

Pinch of salt ⁣

*Chopped walnuts optional ⁣

Topping:

Apple butter⁣

Nut butter + maple syrup – just mix about 3:1 until you have enough and it tasted caramel-y ⁣

DIRECTIONS:

Preheat oven to 350 Fahrenheit ⁣

Mix all of the ingredients together, blending thoroughly ⁣

Spray or line a pan and transfer mixture⁣

Bake for about 20 minutes or until brown on top/edges⁣

Remove, let cool and add toppings ⁣
