Merry Christmas! If you want to do some Christmas Day baking but only have 20 minutes, I’ve got you. These vegan sugar cookies are *actually* foolproof and are so delicious on their own, with chocolate chips or decorated.
+ 2 cups flour (I used gluten free 1:1 baking flour)
+ 3/4 cup sugar (I used coconut)
+ 3/4 cup maple syrup
+ 1/2 cup coconut oil
+ 1 tsp vanilla extract
+ 1 tsp baking soda
+ Pinch of salt
1. Preheat oven to 350 degrees Fahrenheit
2. Combine all ingredients thoroughly
3. If you’re using cookie cutters, roll dough out into one big piece, about 1/4 inch thick – otherwise, roll out into cookies of your desired size 1/4 inch thick
4. *If your dough is too dry just add a little more syrup and coconut oil, they’ll still come out fine
5. Bake for about 15 minutes or until just lightly browning around the edges
6. Remove, let cool and enjoy!
