Vegan Christmas Sugar Cookies

Merry Christmas! If you want to do some Christmas Day baking but only have 20 minutes, I’ve got you. These vegan sugar cookies are *actually* foolproof and are so delicious on their own, with chocolate chips or decorated.

Ingredients

+ 2 cups flour (I used gluten free 1:1 baking flour)⁣
+ 3/4 cup sugar (I used coconut)⁣
+ 3/4 cup maple syrup ⁣
+ 1/2 cup coconut oil ⁣
+ 1 tsp vanilla extract⁣
+ 1 tsp baking soda ⁣
+ Pinch of salt⁣

Instructions

1. Preheat oven to 350 degrees Fahrenheit⁣

2. Combine all ingredients thoroughly ⁣

3. If you’re using cookie cutters, roll dough out into one big piece, about 1/4 inch thick – otherwise, roll out into cookies of your desired size 1/4 inch thick

4. *If your dough is too dry just add a little more syrup and coconut oil, they’ll still come out fine ⁣⁣

5. Bake for about 15 minutes or until just lightly browning around the edges ⁣

6. Remove, let cool and enjoy!
