Vegan Cinnamon Roll Cookies

In a shortage of time, patience and actual cinnamon rolls, I combined 3 of my old recipes to make these vegan cinnamon roll cookies. I did my best to explain on my IG post, so swipe for pics that might help!

Ingredients

Cookies:
+ 2 1/4 cups almond flour ⁣
+ 1/3 cup maple syrup ⁣
+ 1/4 cup coconut oil⁣
+ 1 tsp vanilla extract ⁣
+ 1/2 tsp baking soda ⁣
+ Pinch of salt⁣

Filling:
+ 1/2 cup coconut sugar ⁣
+ 1 1/2 tbsp (ish? I eyeballed it) cinnamon ⁣
+ Just enough maple syrup to make mixture moist ⁣

Frosting:
+ Coconut cream⁣
+ Maple syrup ⁣
+ (You can use any frosting recipe you like)⁣

Instructions

1. Preheat oven to 350 ⁣

2. Roll dough into long strips (swipe here to see pic)

3. Line with filling and then roll into a circular shape; press down gently ⁣

4. Once all cookies are ready, bake for about 10 minutes or just until firm on the outside ⁣

5. Remove, let cool ⁣

6. Separately, combine the hard part of coconut cream (the top half of the can) with enough maple syrup to be sweet; drizzle over cookies once they’re cool⁣
