In a shortage of time, patience and actual cinnamon rolls, I combined 3 of my old recipes to make these vegan cinnamon roll cookies. I did my best to explain on my IG post, so swipe for pics that might help!
In a shortage of time, patience and actual cinnamon rolls, I combined 3 of my old recipes to make these vegan cinnamon roll cookies. I did my best to explain on my IG post, so swipe for pics that might help!
Cookies:
+ 2 1/4 cups almond flour
+ 1/3 cup maple syrup
+ 1/4 cup coconut oil
+ 1 tsp vanilla extract
+ 1/2 tsp baking soda
+ Pinch of salt
Filling:
+ 1/2 cup coconut sugar
+ 1 1/2 tbsp (ish? I eyeballed it) cinnamon
+ Just enough maple syrup to make mixture moist
Frosting:
+ Coconut cream
+ Maple syrup
+ (You can use any frosting recipe you like)
1. Preheat oven to 350
2. Roll dough into long strips (swipe here to see pic)
3. Line with filling and then roll into a circular shape; press down gently
4. Once all cookies are ready, bake for about 10 minutes or just until firm on the outside
5. Remove, let cool
6. Separately, combine the hard part of coconut cream (the top half of the can) with enough maple syrup to be sweet; drizzle over cookies once they’re cool
