Vegan Tahini Mac & Cheese

This Vegan Tahini Mac & Cheese is one of my favorite easy comfort foods and I made it more festive by adding some pumpkin (you can omit or add some butternut squash which would be good too)! I like to throw in some roasted vegetables and use chickpea or lentil pasta for some protein. It’s the ultimate comfort food!


Makes about 4 servings
+ Pasta of choice ⁣(I like chickpea or lentil)
+ 3/4 cup milk (hemp is nice and creamy for this)⁣⁣
+ 1/3 cup tahini 
+ 3/4 cup nutritional yeast ⁣⁣
+ 1/4 cup olive oil ⁣⁣
+ 1/4 cup lemon juice⁣⁣
+ 1 tsp garlic powder (or fresh garlic)⁣⁣
+ 1/2 tsp onion powder (optional)⁣⁣
+ 1/4 tsp smoked paprika (optional but delish)⁣⁣
+ 2-4 tbsp pumpkin purée ⁣
+ Lots of salt!! It’ll taste super bitter without⁣!


Blend all ingredients and pour over pasta of choice
