25-Minute Greek Chicken Bowls

I’ve been making these Greek Chicken Bowls on repeat lately. It’s the perfect summer meal so let me know if you want specific recipes for the dressing or tzatziki (I didn’t make it when I filmed this because I didn’t have time). I made my Bone Broth Rice to go with it – recipe here. Here’s a video of exactly how I made it. Enjoy!

Ingredients

+ 1 lb chicken thighs (or breast)
+ 1/2 cup olive oil
+ 1 tbsp oregano
+ 1 tsp paprika
+ 1 tsp garlic powder
+ 1/2 lemon (juice)
+ Salt and pepper to taste

Instructions

1. Preheat oven to 425 Fahrenheit.
2. Make marinade and pour over bite sized pieces of chicken.
3. Add to a lined baking sheet and cook for about 15-20 minutes or until turning golden brown.
4. Arrange everything in a bowl: butter lettuce, cucumber, Kalamata olives, dill, feta and dressing which is just olive oil, balsamic, a little mustard, salt and pepper. You can use Greek dressing too obviously.
5. I used spicy tahini on this bowl but I love making tzatziki too! Add the chicken and rice and enjoy!
