25-Minute Mediterranean Fish

This is my go-to high protein dinner! This entire meal takes 25 minutes and is so delicious. I pair it with my Bone Broth Rice for the best combination. I don’t measure so these are approximations – here’s a reel showing exactly how I make it.

Ingredients

+ 2 branzino filets ⁣
+ 1 cup cherry tomatoes, halved ⁣
+ 1/2 cup pitted Castelvetrano olives, halved⁣
+ 1 clove garlic, thinly sliced ⁣
+ Olive oil ⁣
+ Salt and pepper to taste ⁣
+ Bone broth rice (recipe above)

Instructions

1. Preheat oven to 400 Fahrenheit. ⁣
2. On a baking sheet or foil arrange branzino filets and add a little salt and pepper. ⁣
3. Then add the tomatoes, olives, garlic and lightly drizzle everything with olive oil. ⁣
4. Bake for about 12-15 mins or until flaky.⁣
5. Change oven to max broil and broil for approximately 2-3 mins until fish has slightly browned edges. ⁣
6. Remove, serve with bone broth rice and veggies or sides of choice!
